Brunch is such a simple and delicious way to celebrate the long-awaited arrival of the weekend. I love to whip up a little something for Sunday brunch here in the farmhouse kitchen. While the menu items vary based on what I have on hand in the refrigerator, pantry, and freezer, we definitely have our favorite brunch menu.
Homemade English muffins or buttermilk biscuits topped with oven poached eggs dressed with a blanket of easy microwave hollandaise is the brunch plate that receives the most requests. When our chickens and ducks are filling my egg basket to the brim, this meal also becomes a regular feature on our lunch and dinner plates.
With these easy recipes, you can pull off a delicious brunch worthy of the weekend with little effort. Whether you’re brunching on your own or making a meal for a crowd, you can bake up to a dozen beautifully poached eggs at once, place them on a warm English muffin or biscuit, and spoon over plenty of hollandaise sauce for good measure. Or, you can use the leftover whites from your batch of hollandaise to create a fluffy scramble of eggs instead of poached eggs. Scrambled or poached, a well-cooked egg is always welcome on my brunch plate.
