Buffalo Chicken Dip

There are some recipes that are less of a recipe and more of a guide. They don’t require exact measurements, come together quickly, and use ingredients that I am likely to have on hand. The best of them can also be adjusted to your tastes and the ingredients you actually have on hand. They’re the sort of recipes I like to make on a Sunday afternoon when we want a little something to snack on and I want to move past the making of the recipe and on to the snacking.

This is just that sort of recipe. While I have included suggested amounts for each ingredient, you can easily adjust them based on your preferences or to use the ingredients you happen to have on hand. Use your favorite sort of smooth melting cheese, add more hot sauce if you prefer, use less if you like less spice. I love to add crumbled blue cheese to my dip because I love that tangy flavor. If you don’t enjoy the flavor of blue cheese, it can be completely left out of the mix with equally delicious results.

This dip includes the flavors of buffalo chicken wings in a delicious dip or spread in a less messy form, perfect for snacking. It’s delicious warmed up and spread on toasted bread as an afternoon snack while you’re watching a game or movie on television. I also enjoy this dip on crisp stalks of celery for a lighter and low carb snack.

Don’t let any leftovers go to waste. I like to spread a bit of this warm dip between two slices of bread before toasting it up in a skillet with just enough butter to brown the bread. The result is a delicious grilled cheese that you won’t be sorry to have on your plate.

This recipe is all about blending the ingredients to achieve the consistency and flavor that suits your tastes. So, add more cheese if you like, less hot sauce to limit the spice if you prefer. I have used hot sauce and buffalo sauce with equally good results. I have also used mayonnaise and ranch depending on what I have on hand. The dip is delicious and easily spread on toast or dipped with crisp celery no matter the version you make.

Ingredients

For the Dip:

  • 8 ounces roast chicken , shredded or cut into bite sized pieces
  • 2 ounces cream cheese
  • 2 ounces Monterey Jack shredded
  • 2 ounces buffalo sauce or hot sauce
  • 2 Tbs mayonnaise or ranch

For Serving:

  • blue cheese crumbles
  • hot sauce
  • Toasted bread/pita
  • celery

Instructions

  • In a microwave safe bowl, combine the chicken, cream cheese, shredded cheese, hot sauce, and mayonnaise. Microwave in 30 second increments, stirring after each round of heating. The cheese will melt and create a smooth, cheesy base for the chicken and hot sauce.
  • Once the dip is warm and the cheeses are melted and smooth, taste for seasoning. Add more hot sauce or mayonnaise if you like until it tastes just the way you like it.
  • I like to add a bit of crumbled blue cheese and a drizzle of hot sauce to the surface of the dip before serving. Serve with toasted bread or pita and crisp celery stalks.
