Special Sauce
For years, I was under the impression that the Special Sauce on a Big Mac was just Thousand Island dressing. I was wrong. Special Sauce includes a special ingredient that makes it unique from Thousand Island: yellow mustard. Side by side, the differences are easy to taste and this homemade version that comes together in minutes always wins hands down.
After making up my own batch of this sauce a few times, we settled on a version that we love. I like to combine two or three different varieties of pickles to lend their own unique spices and flavor to the sauce. I find it is even more delicious that way.
While many versions of this sauce call for raw onion, I find that it can overpower the sauce, so I prefer to use onion powder. You can substitute raw onion if you prefer. This is just that sort of recipe. Mix up the ingredients in the proportions that you like best and make it your own. Just don’t forget the mustard!
Special Sauce
Ingredients
- 3 Tablespoons mayo
- 1 Tablespoon ketchup
- 1 teaspoon mustard
- 2 Tablespoons finely chopped pickles
- onion powder to taste
- salt and pepper to taste
Instructions
- Combine all ingredients in a small bowl. Taste and season as desired. Refrigerate until needed.
Can this be canned to make it shelf stable?
That’s a good question that I don’t have an answer for. I haven’t attempted to can it, so I don’t have any personal experience to share. I mix it up as we need it and keep it in the refrigerator.
