This recipe can easily be sized to suit the number of people gathered around your breakfast table. A quarter sheet pan (9 x 13) or half sheet pan (13 x 18) can be used without needing to adjust the baking time. A quarter sheet pan bakes up easily in a toaster oven to make pancakes for one or two.I use my homemade pancake mix in this recipe. You can learn how to make your own pancake mix here.

Ingredients
To Make a Quarter Sheet Pan Pancake:
1Tablespoonbuttermelted
1Tablespoonoil
1large egg
¾cup(6 ounces) buttermilk or milk
1 ¼cup(150 grams) pancake mix
To Make a Half Sheet Pan Pancake:
2Tablespoonsbuttermelted
2Tablespoonsoil
2large eggs
1 ½cup(12 ounces) buttermilk or milk
2 ½cup(300 grams) pancake mix
Instructions
Preheat the oven or toaster oven to 400 degrees Fahrenheit. Prepare your baking pan by brushing with a bit of softened butter or a thin coating of your favorite baking pan spread or spray. I like to use my homemade Magic Baking Pan Release Spread.
In a large bowl, combine the melted butter, oil, egg, and buttermilk or milk. Whisk to break up the egg and combine into a smooth mixture.
Add the pancake mix to the bowl and whisk just enough to incorporate all of the dry ingredients but take care not to overmix. The batter should be a bit thick and may still have small lumps in it. That’s okay, I promise. Once you can no longer see dry ingredients, stop mixing.
Transfer the batter to your prepared pan. Spread the batter evenly in the pan. Add your favorite pancake additions if you like. We like to flavor each quarter of the pan with its own addition. Chocolate chips, blueberries, sprinkles, and sliced bananas are all delicious. Or, you can leave the batter plain for traditional pancakes.
Transfer the baking pan to the preheated oven. Bake for 8 to 10 minutes. When fully baked, the top of the pancake will take on a light brown color and a toothpick inserted into the center of the pan will come our cleanly or with small crumbs attached.
Remove the pan from the oven and allow the pancake to cool for 1 to 2 minutes. Cut the pancake into portions and serve with your favorite pancake toppings.
Notes
Leftovers, if there are any, can be kept at cool room temperature or in the refrigerator for several days. They can be warmed up in the microwave for 20 seconds and served for a quick breakfast or snack.
